Sweet Potato Sausage Casserole (Paleo)
One pot dinners and casseroles are among my all time favorite meals to make. Both are easy to clean up, usually simple to make, and always taste amazing!
The wonderful thing about this paleo sweet potato sausage casserole is that the spice can be altered and it changes the whole flavor profile of the dish to whatever you want it to be.
This is a great summer, fall, winter or spring dish!

How to Make Sweet Potato Sausage Casserole
First things first – get all those veggies and potatoes cut!

Preheat oven to 400 degrees F.
Add 2 tablespoons avocado oil to a large saucepan over medium-high heat. Once hot, mix 1 teaspoon seasoning into oil.

Add sausages to the pan and mix well to get the sausages nice and coated with oil and seasoning. Fry for 5-7 minutes until the outsides start to darken. Flip and turn around every few minutes to get both sides.

Meanwhile, add sweet potatoes, peppers, apples, and onion to a large casserole dish. Drizzle with remaining 1 tablespoon of avocado oil, sprinkle remaining 1 teaspoon of seasoning over the top and mix well.


When done, add sausages to the casserole dish and mix well.


Bake for 20 minutes uncovered, then loosely cover and bake for 20 more. Check potatoes and bake longer if needed.
Which Seasoning Should I Use?
You can use whatever seasoning you want to for this! Seriously! I’ve used so many! My two favorites, are Italian Seasoning and an Ayureda summer spice blend.

You can view the full spice recipe in the book Ayurveda Cooking for beginners. It is a mix of coriander seeds, fennel seeds, dried mint, dried dill and turmeric. This spice blend is by far my favorite and I use it on so many things. I make a big batch and keep it on hand for easy dinners such as this Paleo Sweet Potato Sausage Casserole!
What Type of Sausage Should I Use?
I like to use chicken apple sausages. But you can use whatever kind you enjoy. I think kielbasa would taste extra lovely with this recipe as well. I would not use any ground meat, but any link type sausage should work beautifully. And then sauteing it just a bit gives it that extra boost of flavor.

Can I Freeze This Sweet Potato Sausage Casserole?
You absolutely can! I love making a big batch and freezing part of it. My biggest tip would be to let it cool down before putting it in the freezer bag. If you have a vacum sealer, that works the best!
This meal also works wonderful for meal prep. Make a big batch and eat leftovers for lunch for a few days! Or make it on a Sunday afternoon and eat it for lunch the entire week.

- 8 chicken apple sausages, sliced
- 2 orange sweet potatoes, cubed
- 1 white sweet potato, cubed
- 1 red pepper, cut into 1 inch slices
- 1 green pepper, cut into 1 inch slices
- 2 apples, cubed
- 1 medium purple onion, sliced
- 3 tablespoons avocado oil, divided
- 2 teaspoons Italian Seasoning or Seasonal Ayurveda splice blend (see post), divided
