Paleo Gluten Free Single Serve Chocolate Chip Cookie
Let’s face it, you don’t always want, or have the time to, whip up an entire batch of cookies. Or if you’re like me and 1) Do have the time and 2) Do want an ENTIRE batch of cookies but don’t have the restraint to eat just one, this cookie is perfect for you!
It’s crunchy on the outside and gooey in the middle. The best of both worlds. This single serve chocolate chip cookie is not only gluten free and paleo, but it is also vegan friendly! It is perfect for just kicking back and dunking into some almond milk. Plus, it’s ready in just 15 minutes from start to finish!

How to Make Gluten Free Single Serve Chocolate Chip Cookies
Preheat the oven to 350° and line a small baking sheet with parchment paper.

In a small bowl mix together the almond flour, tapioca, maple syrup, salt, and coconut oil until it becomes a ball. stir in the chocolate.


Place the ball on the baking sheet.

Bake for 10-13 minutes or until golden around the edges. Remove from oven and let cool 5-10 minutes.

Can I Double the Recipe?
You can, but this recipe is really designed to be a single serving cookie! I would not do anything more than just doubling it. Beyond that, a good chocolate chip cookie recipe that is for a batch would be great! IF that is what you are looking for, then these low carb chocolate chip cookies are amazing!

Can I Use Regular Chocolate Chips?
You can use whatever chocolate you like. Just realize that depending on the choice you use, it may make this single serve chocolate chip cookie recipe not paleo or not vegan. If you are ok with that, then have at it! Change it up to your heart’s desire!

Ingredients
- 3 tablespoons blanched almond flour
- 1 tablespoon tapioca flour
- 2 teaspoons maple syrup
- 1/2 tablespoon solid coconut oil
- 1 tablespoon 85% dark chocolate chopped
- Pinch sea salt
Instructions
